or week night dinner.
We are just suckers for efficiency. Any time we can hack something and save ourselves precious moments for self-care, Netflix, or more ridiculous FaceTime sessions over vats of coffee, we are ALL. IN.
So we thought: why not hack Fathers’ Day? ??♀️
We’ve both got partners of the male persuasion who will be humbly hoping for some sort of celebration this weekend. Probably of the BBQ variety.
Who doesn’t like partying on a Sunday? Until Monday rolls around and nothing is prepared for the week. But there’s no changing Father’s Day, so we thought maybe we could just change our planning to include Fathers’ Day AND food for when Monday rolls around.
Magic.
We present to you: 4 AWESOME recipes to make a slamming, special BBQ lunch or dinner. Simply make a double batch of each (in virtually no extra time) and have delicious grain bowls ready for a week of lunches too.

Avocado Crema Dip with veggies (veggies and plain potato chips would be an amazing combo if you want a bigger appetizer)
Prep It
On Saturday or Sunday morning:
- Whiz up your avocado Crema and chill.
- Prepare your PB cups and set in the freezer.
When You’re Ready To Cook:
- Make your Corn and Zucchini Salad
- Make a batch of Garlicky Quinoa or your fave grain
- Whiz up your walnut topping.
- BBQ your Walnut Salmon.
Enjoy your dinner and SUPERB chocolatey, peanut buttery dessert.
