Muffins were made for lazy fall weekends. As the temperature drops it can’t hurt to save a few bucks on heating and fire up the oven once in a while… the old gal has probably been feeling neglected since BBQ season took over a few months ago. So we’ll consider these muffins not only delicious, but frugal as well. Now you practically HAVE to make them.
While muffins are not the best choice for a meal, they are most definitely a great choice for a treat. After all, a treat is not a treat unless it’s a treat. So step aside chia seeds…brown sugar and wheat flour are here. We wouldn’t give you just any old sugar and flour muffin recipe, though. These nuggets of deliciousness are low in sugar and moistened with healthy dairy and coconut fat instead of the standard vegetable oil. Delicious and moist, and chock-full of nutrition superstars: blueberries, yogurt, oats, and coconut oil.
Enjoy these muffins this weekend with a cup of tea and some quality Netflix time. They’re great slathered in coconut oil, almond butter or peanut butter for a heartier snack.
